Our parcels have a voice – a voice that expresses the very essence of our wines. To express this voice in the purest way possible, we use our exacting expertise to bring to light their many nuances, revealing the signature aromatic finesse, complexity and delicate texture of our wines.

A unique approach to Sancerre wines

Wine lives and breathes. Capturing the exceptional quality of our Sancerre soils isn’t simple – there is no magic formula. This is why we take time to listen to our terroir, explore it and dare to be bold. Preserving the grape’s intrinsic balance remains our essential goal, but it also provides the starting point for our authentic, precise and modern cuvées.

Parcel wines: our guiding principle 

In the cellar, each parcel of our vineyard receives our utmost care and attention. We favour isolated vinification in small vats and tailor the ageing process to each wine. Our team tests these wines repeatedly to identify which container – stainless steel vats, concrete vats, vintage barrels or even amphorae, introduced in 2023 to encourage micro-oxygenation – best reveals the many facets of our different terroirs.

Letting our

terroirs shine throug

We believe in intervening as little as possible to produce quality wines deeply rooted in their terroir. The principles that guide us in our cellar and winery stem from this resolutely minimalist philosophy.

  • We whole-bunch press our grapes using gravity loading, without pumping, to preserve our grape berries;
  • We use neutral yeasts, organic nutrients and limited sulphites to develop the aromas of our juices to the full;
  • We favour longer, calmer fermentation for greater expressiveness;
  • We separate the light pressings from the press wine for greater aromatic precision;
  • We leave our wines to age for longer in contact with the lees to perfect their character.

Marrying emotions

Our all-important assemblage work is spread over several months. From week to week, we taste our impressive palette of juices and compare our multiple vats before repeating these operations blind. For Rodrigo Zamorano, Anne-Sophie Brochard, Matthieu Franchini and François-Régis de Fougeroux, this is an essential part of co-creating our wines through sharing expert insights.
